Our old lab ,Raven, sleeps in our room at night on her blanket. She just always has...well last night, seriously, do they make breath right strips for dogs? Between her snoring and Facey cat feeling the need to snuggle all night and purr LOUDLY, I barely got a lick of sleep.
Chris ran errands while I puttered aroudn the house most of the day. I think I might have gottent he short end of the stick. Today was the day to clean out the fridge. I noticed the carrots we had bought were getting ready to go bad so I made a batch of these muffins for our breakfasts over the weekend.
Carrot Muffins
- 1 1/3 cups all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 teaspoons baking soda
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon salt
- 3 eggs
- 1 cup white sugar
- 3/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups grated carrot
- 1/4 cup cream cheese, softened
- 2 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups sifted confectioners' sugar
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease the bottoms only of 12 muffin cups, or line with baking cups. Sift together the flour, cinnamon, baking soda, baking powder, and salt; set aside.
- Beat the eggs and sugar until frothy and lightened in color. Stir in the oil, vanilla extract, and grated carrot; fold in the flour mixture. Pour the batter into the prepared muffin tins.
- Bake in preheated oven until toothpick inserted in center comes out clean, 15 to 20 minutes. Remove to cool on wire racks.
- Meanwhile, prepare the icing by beating together the cream cheese, butter, vanilla, and confectioners' sugar until fluffy. Frost the cooled muffins and chill until ready to serve.
It also used up the cream cheese. I used half whole wheat flour to make them a bit healthier.
I also used some of my homemade vanilla... That stuff smells so good and the taste is wonderful!
The half bags of chex cereals and half a can of nuts went into Chex Mix. This makes a great snack.
The ham bone in the freezer made a delicious pot of beans. I used pintos and smashed up the leftovers wiht chili powder so Christopher can eat them over the weekend on tortillas
No crochet, no cross stitch , and no sewing. I have been reading bunches on my Kindle Fire and reading up on my blogs .. looking for some new patterns...
