Whew these winter days throw my rythmn off! I had fully decided to pull on the boots and take a nice walk but the sun shone so brightly that the snow turned to mud and so I just fed the chickens and puttered around the yard a bit...
Remember the Book Across the States Challengel from 2008? I'm still on it.... I just read so many books that don't quite fit in the challenge... but I have a couple I have finished in the wings to report...
The Beach House by Mary Alice Monroe was recommended to be back in August by both my MIl and my husbands aunt. We had the privledge of staying right across from a turtle nest at the beach. I was so intrigued! This book has so much information on the loggerhead turtles, romance, acceptance, secrets, life and death... a very good read.... Two thumbs up!
..and now the chicken recipe I promised..
Oriental Style Crockpot Chicken
1/2 cup tomato juice
1/4 cup soy sauce
1/2 cup brown sugar
1/2 cup chicken broth
3 cloves minced garlic
3 lbs skinless boneless chicken breast or thighs.
combine all the ingredients in a bowl and whisk together. Dip each piece of chicken to coat and place in the crockpot. pour remaining mixture over chicken and cook for 6-8 hours on low . Serve over rice or noodles ( we have always used rice)
I really hope to make a trip back to the beach and hopefully expereince a turtle hatching in 2011..it made its way on the bucket list!
