Below is a copy of a post I sent my friend in the northeast who is still in the midst of a summer garden....2 thinly sliced cucumbers
( place in colander and sprinkle with 1/2t salt after 30minutes rinse and drain well
put 2 tomatoes and 1 small onion , cucumbers and fresh basil to taste in a bowl
mix up 1/4 cup cider vinegar
2T olive oil
any favorite seasonings in 1/2 t portions.. I use garlic, celery seed and ground mustard but you can use oregano, celery salt, garlic salt etc/..
pour over veggies and chill for a few hours to mix flavors...
we love this stuff and eat it about every day in the summer....
also.... pesto over pasta is very very yummy
Fresh Basil Pesto Recipe
- 2 cups fresh basil leaves, packed
- 1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
- 1/2 cup extra virgin olive oil
- 1/3 cup pine nuts or walnuts
- 3 medium sized garlic cloves, minced
- Salt and freshly ground black pepper to taste
1 Combine the basil in with the pine nuts, pulse a few times in a food processor. (If you are using walnuts instead of pine nuts and they are not already chopped, pulse them a few times first, before adding the basil.) Add the garlic, pulse a few times more.
2 Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.
Makes 1 cup.
Serve with pasta, or over baked potatoes, or spread over toasted baguette slices.basil flavored olive oil delicious.... just infuse minced garlic and basil in olive oil... this is great to brown meats in or add to tomato sauce.
another great trick is to seep basil in hot water and add baking soda to scrub the bath tub...
