Yesterday was a RARE day at home... it felt wonderful.... the day was beautiful ...cold but sunny....first thing the sheets got washed and hung on the line! I was so tempted to switch from the flannels to the cotton ones...but I know there are still a few " lion" days left in March.
I began the task of washing the blinds and curtains. This is a task for me... I despise washing blinds. I am not a very patient person ...washing blind slats are sort of like weeding a thyme bed...it teaches you patience...but as with each job I am happy when its done.
I have been posting about my reading adventures...but not writing about our family reading adventures. we started a new book this week...
this book should be a great history/ critical thinking/ apologetics type book....
Since I was home yesterday I was able to spend a bunch of time in the kitchen too. I treated Christopher with a spaghetti pie... I think this recipe came from MIL. not sure... but it is quick and easy...and so good
2 tbsp. butter
1/3 c. Parmesan
2 eggs, beaten
1 lb. ground meat
1/2 c. onion, chopped
1/4 c. bell pepper, chopped
1/2 c. Mozzarella
1 can (8 oz.) stewed tomato
1 (6 oz.) tomato paste
1 tsp. sugar
3/4 tsp. oregano
1/2 tsp. salt
1/2 tsp. garlic salt
1 can cream style cottage cheese
8-12 pepperoni slices
vermicelli according to directions. Stir butter and Parmesan into hot
vermicelli. Add eggs and stir well. Spoon into 10 inch pie plate. Use
spoon to shape spaghetti. Cook until set, about 350 degrees for 10
minutes. Brown beef with onion and bell pepper. Drain. Stir in
tomatoes, tomato paste and seasonings. Spread cottage cheese evenly
over pie shell. Top with meat sauce. Bake until bubbly. Sprinkle with
Mozzarella and garnish with pepperoni. Bake until cheese melts. Serves 8.
we have enough left over for today too!
For the last few months there have been homemade cracker recipes floating around. When my hard drive crashed I know I had at least two recipes bookmarked to try. Wendy's and Abby's... I started with Abby's yesterday.... these things were quick, easy and delicious... one thing though I used salted butter and added salt... which I think I will do one or the other next time. It was wonderful eating something we like without preservatives! You can find Abby's recipe @ Proverbs 31 Living. I tweaked it a bit by putting chili powder in it and next time I think I'll put a pinch of cayenne.
1 cup shredded cheese
a pinch of salt and pepper
a bit of chili powder, garlic salt or cayenne ( or abit of all three)
1 1/4 cup flour
1/3 cup butter
blended with pastry blender
add 3T milk
mix and form into a ball
roll out and sprinkle with seasame seeds and form into a ball again... roll out about an 1/8th of an ich thick and cut into crackers...place on baking sheet and pop into a preheated 400 degree oven for about 10-15 minutes
we snacked on these all afternoon!

for supper we wanted something hardy... I decided on Calico Beans and cornbread.... good choice!!
1/2 lb ground beef
1/2 lb bacon
1 chopped onion
1/2 cup brown sugar
1/2 cup white sugar
1 cup ketchup
1 tsp vinegar
1 can pork and beans
1 can butter beans ( drained)
1 can northern beans ( drained)
1 can kidney beans ( drained)
cut bacon into small pieces and brown with ground beef and onion
add the sauce and beans cook in crockpot on low for about 4-6 hours
Lots of reading and not much crafting going on right now in my free time.... and the weather... just sort of pulls you right out the door.... the trees have buds on them!!!!
